LIQUID ARCHITECTURE

1868

A wall built without mortar. A whisky built the same way.

In 1868 Jabez Grimble cut stone from Cut Hill and laid it into a retaining wall without lime or mortar, a wall still admired for its engineering. More than 150 years later, that road leads to our 40-acre property in the Hindmarsh Valley, where we distil with old-world technique and modern precision.

AN EXPRESSION OF TIME

Benchmarked cask by cask, vatted by hand.

Our barrels have been maturing for a number of years, each one individually benchmarked and thoughtfully vatted together by our head distiller. A traditional perspective, respecting the history of distilling, with every expression showing what Australian wine, fortified and mead casks can bring.
